High-quality ingredients
Good pimento cheese is not complicated. It just has to be made with things worth eating. Sharp cheddar, real cream cheese, a touch of goat cheese, and Duke's because there is no substitute. Nothing in the bowl JT would not put on his own cracker.
JT & Islay
It started with a dog named Islay (say it I-Luh) and half a pimento cheese sandwich. It was duck season, early December of 2025, on a bitter cold morning at a farm just outside Savannah. Islay was barely a year old, out for her very first duck hunt, and we were tucked low on the bank of a pond, freezing, her wrapped in a camo woobie blanket and the both of us shivering, half from the cold and half from pure excitement. We had worked all year for this. As the sun came up and the first mallards started to stir, I heard both our stomachs growl, so I pulled a pimento cheese sandwich on white bread out of my pack and ripped it clean in half, one for me and one for her. We scarfed it down, and I swear it was one of the greatest meals of my life: just me, my dog, a pimento cheese sandwich, and a mission we had been training for all year. She had barely licked the last of it off my glove when the ducks came in close. Seconds later I dropped the first one, and the moment it hit the water I told her to "Hunt 'Em Up." She exploded out from under that blanket, crashed into the pond, and brought the duck straight to my hand like we had been doing it for a decade. A perfect first retrieve, from a perfect dog, fueled by a perfect sandwich. That is the morning Boykin Pimento Cheese was born.
